Biryani Queen dum rice, in the making — worth the watch!

    Basmati

    Long-grain basmati, steamed until every grain reaches its full length, strength and aroma — taking in just the right nourishment.

    Spice magic

    Bay leaf, green cardamom and more from the spice box go straight into the water.

  3. 3

    Rice transformation

    The rice comes out of the boil on a slotted spoon, still firm. The dum will finish it.

    The base

    Ghee into the hammered handi, then the masala — this one with potatoes.

    Layers

    Rice over masala, layer on layer. Milk and saffron are drizzled through.

    The seal

    Mint on top, a rope of dough around the rim, and the lid pressed into it.

The legacy

It started with the Kathal biryani.

In Gurugram, Smita Sabharwal, a foodie and the first home chef, ordered in 7 to 8 of the city’s best biryanis.

The next day she cooked her very own Kathal (Jackfruit) biryani | Posted it on Facebook asking “Any takers?” and it was sold out in minutes | It was February 2014, and the legacy begins.

Within a year she had won three awards, and she was crowned the Biryani Queen, and the name stayed.
