How this exotic dish rules Indian hearts

The name is usually traced to Persian — birian, “fried before cooking”, and birinj, rice. Legend credits Mumtaz Mahal with asking the royal cooks for a dish of meat and rice to feed tired soldiers.

At Biryani Queen it is cooked the old way: dum pukht — layered in a handi, sealed with dough, slow-cooked in its own steam.
